The Badger & Mountain Grenache Noir was fermented with it's natural/native yeast and fermented on the skins for 8 days with a light extraction once a day. Fermentation was done semi carbonically with 100% wholebunches. After the 8 days extraction, the wines were pressed to small 225L barrels until bottling in December 2022. Minimal intervention winemaking was done in the cellar with zero additives apart from a small amount of Sulphur at bottling.
