Description
For the Rioja inspired blend, Tempranillo, Cinsault and Grenache grapes are sourced from Fairview in Paarl. A parcel of Shiraz was included in this vintage for some mid palate and spice. Mediterranean cultivars like Tempranillo and Grenache are well suited to the hot and dry conditions in Paarl.
The grapes were handpicked and sorted into open top French oak foudres for fermentation. All vineyards treated separately. The Cinsault and Grenache Noir grapes included 20% whole bunches at the bottom for elevated fruit. Punch-downs took place daily and the wine was basket pressed after alcohol fermentation. The components were further matured in French and American oak barrels, of which 20% new barrels were used for the Tempranillo for a total of 23 months. Each component of the blend was kept separate and until final barrel selection and blending occurred.
