In the vineyards of Northern Paarl, the Pinotage grapes bask in warm sunshine, cooled by southerly summer winds. These early-ripening grapes avoid the harsh late-season heat, drawing freshness from granite soils and a fruity, full mouthfeel from shale soils.
Harvested at 25-26° Balling, the grapes undergo de-stemming and a 24-hour cold soak before extended skin contact, resulting in a rich, dark purple wine with a gentle tannin structure. Two weeks of alcoholic fermentation are followed by malolactic fermentation in steel tanks, softening the acids for a beautifully rounded mouthfeel. Aging in older barrels ensures an elegant and smooth finish that’ll leave you saying, "Pour some more!"
