Fairview Darling Sauvignon Blanc 2025 is made from dryland vineyards near the West Coast, where cool ocean breezes and Oakleaf soils enhance freshness and aromatic intensity. The grapes were harvested early, gently pressed as whole berries, and fermented in stainless steel to preserve pure fruit character. A short period on fine lees added texture and balance.

Pale straw with a green tinge, the wine shows classic Sauvignon Blanc aromas of tropical fruit, fig, lemon, and lime, with subtle herbal notes.
