Description
Charles Back Fairview Brut 2022 is a refined Cap Classique crafted from Viognier, Grenache Noir, and Grenache Blanc grown on the slopes of Paarl Mountain. Handpicked fruit was whole-bunch pressed and fermented in stainless steel, with the base wine resting on the lees before undergoing a second fermentation in bottle and extended lees ageing.
Pale gold in colour with a fine mousse, the wine shows aromas of green stone fruit, apple, and lime with subtle lees complexity. The palate is fresh and precise, offering tart apple, citrus zest, flinty minerality, and a dry, zippy finish. Elegant and vibrant, it pairs beautifully with seafood, sushi, salmon trout, summer salads, or soft cow’s and goat’s milk cheeses.
