Old School Syrah is not a jam soup, with toasted oak chips added for mocha flavour. The wine is fermented ‘old-school’ with wild yeast (partially whole-bunch) and raised in large wooden casks (or ‘foudre’ en Francais). An homage to the savoury, wild yet elegant renditions from Paul Boutinot’s ancestral lands.
The wine offers prominent dark fruit notes on the nose, complemented by a variety of spiced aromatics – particularly black and white pepper. The palate shows fresh acidity and great structure, whilst developing into a spicier character and ending with well-balanced, ripe tannins.
It’s a great wine on its own, or enjoyed with a pepperoni pizza or red meats.
