Description
Fairview Merlot 2023 is crafted from Stellenbosch and Darling vineyards influenced by cooling maritime conditions. Grown in koffieklip gravel and decomposed granite soils, the grapes ripened slowly, delivering fresh fruit and balanced structure.
Fermented in stainless steel and matured for 12 months in French oak, the wine shows aromas of red berries and plum with subtle cocoa and oak spice. The palate is smooth and medium-bodied, with soft tannins and a polished finish. Versatile and food-friendly, it pairs beautifully with beef fillet, veal, or vegetarian dishes and has the balance to age well for 3–5 years.
