Dark red colour with youthful berry red brightness. The nose invites with charming berries, freshly picked Italian herbs and old-world damp forest floor earthiness. The palate is medium bodied with raspberry and juicy red fruits, spice, and tart acidity, typically from cool climate Darling and Sangiovese. Firm, yet fine tannin structure, will age for 5 – 8 years under good storage conditions.

A winner for any dinner party. Homtini suits most Italian style dishes – be it rich tomato-based pastas or flavourful pork tenderloin.

Description

The Sangiovese, Cabernet Sauvignon, Merlot and Shiraz all come from Fairview’s Darling vineyards. They are dry land farmed and planted in deep, rich Oakleaf soils. Summer canopy management practices include suckering and leaf removal, ensuring optimal sunlight penetration.

The Sangiovese grapes were hand sorted and fermented in “foudre”, with a small percentage of whole bunches included in the fermenter. The other grape varieties were gently crushed, destemmed and fermented in stainless steel tanks with pump-overs occurring three times a day. After fermentation, the Cabernet Sauvignon and Merlot spent some extra time on the skins and were matured for 24 months in 15% new French oak barrels and seasoned American oak. The Sangiovese and Shiraz is matured in older French oak barrels. This wine was made from a selection of barrels showcasing the unique characteristics of the Darling region through the selection of the best each cultivar can contribute to the blend.
