Pale green, yellow in the glass. Refreshing springtime aromas of sweet jasmine blossoms, lemon and apricot on the nose. A semi-dry entry on the palate, with tart stonefruit, linear minerality and citrussy acidity typical of its coastal site. The good pH allows Riesling to age well, recommendation of 3 – 5 years where secondary aromas will develop but can also be enjoyed fresh in the next couple of years.
Thai, Cape Malay cuisine and chili-based dishes make a delightful partner for this wine, as the sweetness balances out the hot spiciness. Riesling also goes down a delight with Fairview’s goats milk Camembert cheese.
Description
Harvested from vineyards just outside Darling on the cool-climate West Coast. These unirrigated vineyards were planted in 2003 on dark, red Oakleaf soils, approximately 3oom above sea level.
Picked in the early morning at 22,5 balling, the grapes were whole bunch pressed, after which the juice was allowed to settle for 2 days before being racked off into stainless steel tanks for a cold fermentation. The fermentation was stopped early, giving the wine a natural sweetness.
