Bright ruby red in colour with aromas of red currants, sweet plums and a hint of mocha. Medium bodied palate with juicy tannins, classic Merlot red berry fruit character and a harmoniously quaffable finish.
A wonderfully versatile wine. Will pair well with elegantly flavoured meats eg. beef fillet or veal.
Description
This Merlot is produced from our Stellenbosch and Darling vineyards with both vineyard sites within close proximity to the coast. The vines grow on koffieklip gravel and decomposed granite soils. All vineyards are trellised on the 5 wire extended Perold system. To ensure sufficient sunlight penetration, summer canopy management techniques include tipping, leaf removal and shoot positioning are practised. Fruit ripeness is constantly monitored in order to achieve a fresh fruit profile
The grapes were harvested at 25.0 degrees balling, destalked and gently crushed into stainless steel tanks. Pump-overs were done up to three times a day. After fermentation, the wine was racked into barrels for malolactic fermentation and matured for 12 months in French oak barrels, of which 15% was new oak. A second portion of the wine was hand-sorted, fermented in an open top wooden vat and then basket pressed. This handcrafted portion of Merlot adds depth and complexity to the final blend.
